About Truffles

Oregon produces four edible truffles: the winter white, spring white, black and brown varieties. Although often thought of as mushrooms, truffles are the fruiting bodies of fungi that grow on the root systems of Douglas fir trees. Found mostly in rural forests, truffles also appear on city-dwelling trees. When it comes to finding truffles dogs play an important role in looking for Oregon’s truffle. Dogs are used to find most of the quality truffles in Oregon. For decades, the state’s truffles had a bad reputation because they were raked up before they were ready. Dogs don’t find truffles, they choose which ones are ready. By using a dog, you’re getting truffles that are reliably ripe, and the quality is completely different. 


Truffle Hunting

Lagotto romagnolo are the only dogs bred for the specific purpose of truffle hunting in modern times, and their keen sense of smell and natural tendency to dig make them experts at the task. In addition to breeding these beautiful dogs we also enjoy going truffle hunting with our trained Lagotto dogs during the Oregon's peak truffle season. It is always a great time when we get to spend time with our dogs as well as enjoy the process of finding truffles together. Without our trusty Lagottos, we would not be nearly as successful at finding truffles, even with our knowledge and experience.
